Austin, Texas-based Vital Farms (vitalfarms.com) takes pasture-raised farming to the next level with its new Restorative Pasture-Raised Eggs. Produced using regenerative agriculture principles such as perennial rotations and cover crops, the eggs come from five farms recently transitioned to a core set of tenets that promote rich, nutrient dense soil. The eggs are called Restorative rather than Regenerative because there are limited third-party certification options for egg farmers who follow regenerative practices but don’t use mobile coops. Offered in home-compostable cartons (packed 15 to a case) made with natural grasses, the eggs are expected to retail for $9.99 per dozen.
