New York-based Beyond Better Foods launches keto ice cream pints and bars under its better-for-you Enlightened (eatenlightened.com) brand. Billed as the lowest net-carb ice cream on the market (and the first such product available nationally), Enlightened Keto contains 1 gram of net carbs and less than 1 gram of sugar per serving. Like the rest of the Enlightened lineup, the keto collection is sweetened with zero-calorie monk fruit and erythritol that won’t spike blood sugar. Pint flavors include Butter Pecan, Chocolate Glazed Donut, Coffee & Cream, Chocolate Peanut Butter, Mint Chocolate Chunk, Peanut Butter Fudge and Red Velvet. Bar flavors include Dark Chocolate, Marshmallow Peanut Butter, Mint Chocolate Chip and Peanut Butter Chocolate Chip. Made with real cream to deliver the high-fat, low-carb nutritional profile needed to sustain ketosis, both pints (16 ounces) and bars (four 3.75-ounce novelties per 15-ounce package) are packed eight to a case.
